Who Wants One Eclair- When You Can Have a Whole Cake?

So I have decided to start off 2013 with a delish recipe that comes from a church cookbook.  It has to be good, right?  I probably should start 2013 off with a salad recipe, but that isn’t any fun.

Chocolate Eclair Cake

Icing:

1 cup sugar

1/3 cup cocoa

1/4 cup cold milk

1 stick butter

Bring to a boil and boil for one 1 minute.  Set aside to cool.

Filling:

2 pkgs Instant French Vanilla Pudding

3 cups cold milk

8oz  Cool Whip

Entire box of graham crackers

Mix pudding and milk for two minutes with electric mixer.  Add Cool Whip and mix well.

Line a 9×13 pan with graham crackers.  I leave the crackers intact.  Alternate with pudding mixture, end with graham crackers.  Make two layers of pudding and three layers of graham crackers.  Pour icing all over, top with crushed graham crackers and chill for at least for 2 hours.  I like to make this the day before I am going to serve it.  It is so much better the second and even the third day!  My Mama likes to have it for breakfast!

Part of my very loud Italian family stopped by my parents house last Sunday for lunch.  We had a feast of wedding soup, lasagna, salad, bread and this cake for dessert.  I felt like a stuffed pig, and was so glad that I wore my elastic waist pants!
