So I woke up on this freezing cold Monday morning in the mood to bake. I find this very strange because I had absolutely no motivation all weekend long. I did get my chores done, but not much of anything else. Never in a million years would I have thought that I would wake up on a Monday morning all chipper and ready to bake.
I came across a recipe for oatmeal muffins while I was surfing pinterest. I actually had all of the ingredients that the recipe called for. Hattie was busy trashing playing in the living room so I thought why not. Personally, I am very tired of all the heavy rich food from the holidays. So I thought these muffins sounded light and healthy.
I did make some adjustments to the recipe so here is my recipe:
Banana Berry Oatmeal Muffins
- 3 mashed bananas (the more ripe the better!)
- 1 cup vanilla Almond milk
- 2 eggs
- 1 tbsp Baking powder
- 3 cups Old Fashion oats
- 1 tsp vanilla extract
- 2 handfuls dried cranberries ( blueberries or chocolate chips could be used)
Preheat oven to 375 degrees
Mix everything together in a large bowl, and let sit while you prepare the muffin cups.
Spray a muffin pan and/or liners with with non-stick spray.
Divide batter into 15 muffin cups. They should be just about filled.
Bake 20-25 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.
The muffins may stick when hot but are removed easily when cooled for a bit.
This is the perfect recipe for over ripe bananas. My bananas were almost black. I have a habit of throwing them in the freezer when they get over ripe. I always say I will make a smoothie or banana bread with them. I don’t even like banana bread. My Grandma was famous for her banana bread. So I think this is where I learned the freeze over ripe bananas trick from.
The Husband and Hattie both loved the muffins. I personally thought they were good, but had a strange texture. I am not sure if I have ever had an “oatmeal” muffin before. I love an oatmeal raisin cookie, but those are slightly different than a muffin. So Maybe I need to figure out how to make oatmeal raisin cookie muffins!

- Mash up your bananas
- Mix everything together
- Ready to go in the oven
- Yummy…
