Greek Chicken Pasta…Opa!


So I am still on a “Greek” kick.  I just cannot get enough of it lately.  I am beginning to think that maybe I really do have some Greek blood running through my veins.  I threw together a Greek inspired pasta dish the other night for dinner.  It was super easy and turned out delish!

Greek Chicken Pasta

3 chicken breasts, chopped

1 cup chicken broth

juice and zest of one 1 lemon

1 tablespoon oregano

1/2 cup Feta cheese

1/2 cup Kalamata olives

1/2 cup sun dried tomatoes

1 cup spinach

1 cup artichokes, jarred

1/2 cup olive oil

2 cloves garlic, chopped

sea salt and pepper to taste

1 lb Penne pasta, cooked

Fry the garlic in the olive oil over medium heat in a large frying pan.  Add the chicken, and cook it until the chicken is brown on all sides.  Add the sun dried tomatoes, artichokes, olives, oregano, chicken broth, lemon zest and lemon juice to the pan.  Turn heat to low, cover and simmer for about 15 minutes.  Remove the lid, and add the spinach.  Once the spinach is wilted, remove the pan from the stove.  Add in the cooked pasta, feta cheese and season with salt and pepper.  Serve.

So whenever I cook pasta, I always cook at least a pound.  As far as I am concerned, there can never be too much pasta.  Yup…I have Italian blood for sure!

  3. This looks fantastic, pinning it now! I am also Italian and have no idea how to cook an appropriate amount of pasta. I usually just dump the whole box in. I blame my Italian grandmother who always cooked for an army!
